I was doing a play in Asheville, NC, once and had a pizza epiphany... yes, a New Yorker having a pizza epiphany in North Carolina!! This great bar downtown served a white pizza like none I'd ever tasted, and ever since then, I've been making my own version. I gently sauté tons of chopped garlic in olive oil just until it softens... no browning. Then take that off the heat, and add a good pinch of red pepper flakes. When it's totally cool, I add about 1 cup of chopped fresh herbs... any mix, but mine is usually sage, thyme, oregano, parsley, rosemary, and basil. Top the prepared pizza dough evenly with the mixture, cover with shredded mozzarella and grated Parm. Bake as usual. Rejoice!
