Sometime when you're at a farmer's market, go wild and buy 1 or 2 ugly dirty knobby things called celeriac or celery root. It may be ugly, but it's really good...
And here's an easy, VERY old-fashioned way to prepare it. Pare it... removing all of the brown, icky tough outsides. You'll be left with a creamy, ivory, very aromatic ball of deliciousness. Quickly! This is one of those "it darkens fast" vegetables!
Cut it into matchsticks. Toss them with lemon juice, and mayo, and mustard... maybe a little salt... and lots of pepper... et voilà... Celeriac Remoulade... the most refreshing side or salad you'll ever taste.

PS. The picture you're seeing here is a celeriac plant that my wacky best friend carried ON A PLANE FROM LA! I planted it in the former lettuce bed... and I'll keep you updated.
