An assignment to develop some interesting ways to make complex-tasting (but not too complicated to make!) fish recipes led me to these next few posts...
I have never been a big fan of catfish... it always tasted kind of muddy and fishy (in a bad way) to me. Now whether that was real, or because I knew they were bottom dwellers, I can't say... but when your assignment includes catfish, you have to "get over it" pretty fast.
Well, surprise surprise... the latest generation of farmed catfish is clean, meaty, inexpensive (a BIG bonus) and tastes like fish (but NOT fishy). I am a convert.
