TOFU... For Beginners Like Me... (Stir-Fry with Tofu, Arugula, Ginger and Garlic)

I know tofu can be a frightening and horrifying thing!  But I have finally conquered my fear and horror...

And I like it!!!

Buy a block of extra firm, put it on a plate, put another plate on top of it, and put a heavy pan or can on top of that...

Drain off any liquid the comes out... Do this for about 20 minutes.

Cut it into ½-inch cubes, and marinate the cubes in some soy, garlic and ginger.  Drain and keep the marinade.

Sauté the tofu in a little oil until brown on many sides... I don't say "all" because NO ONE is going to turn each cube until ALL sides are brown!!!!

This is now ready to add to stir-fry, cooked greens, salad, eggs, even soup... pretty much anything.  Your body will thank you.  And the marinade had no raw meat... So toss it into... Whatever.

This particular stir-fry included arugula... with LOTS of ginger and garlic.
