Portions... The Real Key (Chicken Schnitzel with Lemon & Capers, Tater Tots and Salad)

Yes... I'm going to jump on the "portion" bandwagon.

Most of us don't get up at 5 to milk the cows and then spend a 12-hour day working in the fields...  So we don't need quite as many calories as those who came before...

So, instead of trying to give up the foods you love... or "fixing" them by removing all fat and flavor... why not try having small tastes of the things you love instead of a plateful?

This came up over dinner a while ago.  I had about 20 little cubes of raw potato left over from another dinner.  Since we were having a salad (from our famous lettuce bed) and a chicken "schnitzel" made from a half-breast sliced in two and pounded... we didn't need a huge number of potatoes, so I just sautéed the 20 (instead of feeling the need to peel and cube another whole potato to augment the 20.)

And you know what?  It was more than enough.

Don't deny yourself!  It'll just build up to a splurge!

Eat whatever you want... just don't supersize!

(And, though I won't use the dreaded word...  It's still the beginning of The New Year!)
