If Only You Could Smell This... (Pasta with Beef and Garlic)

Monday is the theatre's traditional day off…  So, this Monday, after a long and pretty tough week, I was feeling the need for some major protein.

I sautéed about 10 minced onions (not as much as it sounds... bagged onions in Cleveland seem to be awfully tiny... so this was about one-and-a-half cups...

Then added 2T of chopped garlic...

And a pound of ground beef...

I cooked this for about 15 minutes, until the beef was no longer pink.  To this, I added one pound of almost cooked rotini.  After letting the pasta get acquainted with the beef for a minute, I added 2T of pesto and showers of both black pepper and microplaned Parmesan. The addition of some pasta water loosened the whole mixture and this... combined with a glass of Trader Vic's boxed Chardonnay (for drinking... not for cooking) made for a lovely day-off dinner.
