Lentil Chickpea Burgers

A couple of weeks ago, I got home from filming at about 5:30 and, knowing I had to be up at 4:30 the next day to get back to the studio, I wasn't really anxious to spend ages figuring out what to make for dinner.

I don't usually have a block about that...  but I was a little tired, more mentally than physically.  So I took a look in the fridge and saw some cooked lentils from a few days before... et voilà, veggie burgers seemed like a perfect choice!

So I processed a small onion, added about ⅓C of chickpeas I'd soaked and cooked earlier in the week... and 1C of the lentils.. and processed again. I put the mixture in a bowl and added another ½C of whole lentils, a dash of sriracha and Worcestershire sauce, a handful of breadcrumbs and mixed it all well.  I made five burgers (OK... I got the proportions wrong!) dusted them in flour and sautéed them in EVOO until browned on both sides.

I served two burgers apiece on a bed of very lightly dressed arugula, with a dollop of sriracha-soy mayo...

Burgers for a summerlike spring evening without the meat or the bun... and made without a lot of thought or time!

PS.  Just to drive home the point:  because I had some already prepped food sitting in the fridge, waiting for an encore... I was able to put this meal together in minutes!
