If I had to choose one cuisine to eat for the rest of my life it would be Indian, without a doubt.
The variety of tastes is staggering, and once you get the hang of the spices and techniques, it's actually easy...
For example, if I happen to have a crisper full of greens that HAVE to get eaten soon... and you know what I mean...

One of my go-to recipes is to slowly caramelize a pile of thin-sliced onions until dark golden...

Add tons of microplaned ginger, and garlic, toss in some good curry powder or garam masala, cook for one minute or so, pour in a bit of stock or water, add in the greens (chopped or not), and cover and cook slowly on a low flame for a lot longer that you'd think.

Make sure it never dries out by adding liquid, and when the greens seem to have turned into velvet... add a bit of cream. As I mentioned in my last post, I also like to toast cumin seeds, grind them in my mortar and pestle, and sprinkle the powder on top. Cilantro is a great addition, too, unless you're a cilantro hater.
Serve over rice.
