One of the greats has left us. Marcella Hazan died today.
Rigor is the first word that comes to mind. She didn't suffer fools gladly... and she thought (and taught) that knowledge and techniques are essential... not extraneous. We live in a world that tells us that the easiest and fastest way is the best... she disagreed.
Find her books. Read them. Cook from them. Then you'll understand.
