Panini with Leek and Potato Soup

I wanted to make panini to go with some frozen leek and potato soup I'd thawed...  But the gods were against me.  The remaining bit of fresh mozzarella was anything but fresh (and you know me... I never let anything spoil).

Grrrrrrr...

Then I thought:  why do I have to use mozzarella... ?  Couldn't I use Parmesan and have a (slightly) leaner panini?

Hmmm...

I found a bit of the tomato sauce that had been the base for the hot Italian sausage pizza I'd made earlier this week, and I sautéed about 6 ribs of broccoli rabe (chopped pretty fine) in EVOO with three minced garlic cloves and a bit of salt and red pepper.

WOW!  One Tomato-Sausage-and-Parmesan panini, and one Broccoli-Rabe-and-Parmesan panini... I proved to myself that panini can happen without mozzarella!!!

And those temptingly toasty Mediterranean treats with a bowl of Julia's perfect, luscious, creamy leek and potato soup...
