Frittata with Sage Pesto and Salad of Garden Greens with Vinaigrette

Hot night... unusually uninterested in cooking... but nevertheless...

I started cogitating.

And a glance in the fridge pointed me in the right direction!

A frittata... combining cubed sautéed potatoes, my fake roasted corn, 5 beaten eggs, small additions of both cheddar and Parmesan...

And a big tablespoon of the sage pesto I made a few days ago!

This time, instead of the precarious flipping I usually do when making a Spanish tortilla, I finished the cooking under the broiler.

Now I will admit to you that, though the flavor was out of this world, the sage pesto did manage to make the frittata a rather dull military olive drab.  And despite the fact that I am generally one of those who believes passionately in gorgeous food that tastes as good as it looks, this was one time when I just had to say if it's good enough for Dr. Seuss...
