Minced Chicken and Peanut Stir-fry with Brown Rice

I had some chicken breast trimmings in the fridge...

Some peanuts I bought to see if there's any way another brand can match Planters (the answer is "no," by the way)...

And some scallions I had to use in a cooked dish because I accidentally splashed chicken juice on them...

Don't ask.

I minced the chicken quite fine and put it in a bowl with 2 minced scallions, a ton of microplaned garlic and ginger, some red pepper flakes, a shot of sriracha, and splashes of soy and fish sauces.  I set that in the fridge to marinate for about half an hour.

While the chicken was getting friendly with everything else in the bowl, I started a pot of brown rice cooking, mixed a bit of cornstarch with some chicken stock, and got the sesame oil ready to add at the last minute.

I heated the wok, added some oil, and when I just started to see smoke, I added the whole chicken mix and started to fry.  Then I added two more minced scallions and kept stirring...

When everything looked almost done, in went the stock-starch mix.  Once it thickened, I tasted it... and added a bit more soy.  Turned off the heat.  Added about 2t sesame oil (NEVER use too much sesame oil!).

I served this over the brown rice, and felt very satisfied as well as proud of myself for making something simple, with such complex flavor, and at the same time pretty damn healthy!
