Spanish Shrimp and Chorizo with Brown Rice

Well, well, well...

About 15 beautiful shrimp were sitting half-cooked in the fridge after the pasta we had the other night.  Plus some brown rice from a few days ago.  And cubed potatoes that I hadn't cooked.

This all seemed to scream "SPAIN!"

So off I went.

I sautéed a chopped onion in EVOO until it started to brown.  I added 6 (yes, really) cloves of minced garlic, some smoked salt, and smoked paprika.  Then 1T tomato paste and a splash of tomato juice. (Hey!  It's what I had!)

I let this cook down for about three minutes.  In another pan, I sautéed the potato cubes until fully cooked and browned.  I put them in a bowl, and sautéed 1 spectacularly flavorful Spanish chorizo that I'd minced.  I combined all of these ingredients and added about 1T of chopped mixed sage, oregano, and thyme...

Next I heated some EVOO to a shimmer in a large nonstick skillet and added 2 C cooked brown rice.  Once that was hot and starting to crisp, I added the tomato mixture.  One minute before serving, I tossed in the mostly cooked shrimp, which allowed them to heat through and finish cooking.

And so.  I plated these beauties and topped it all with a shower of minced parsley.  Just before serving, I sprinkled a tiny bit of sherry vinegar over the top.

Wow.

Nothing else but..
