Pasta with Hot Italian Sausage and Radish Greens

You all know I'm a scavenger.

The other day in the test kitchen, there were a lot of dishes that required radishes...

So I saved all of the greens!  I'd never cooked with radish greens but, hey, I love greens and I love radishes...  So why not?

I sautéed about 3/4 pound of hot Italian sausage in a bit of EVOO with lots of chopped garlic.  Yes, I know... every recipe I write includes tons of garlic.  We love it, and it's winter, and everybody has a cold, and garlic seems to keep me healthy.

I added the cleaned and chopped greens... Some red and black pepper... And, at the last minute, a small shot of cream.  Then I added the almost finished pasta (rigatoni this time) and a bit of pasta water, and allowed the pasta to finish cooking.

Off the heat, I added a handful of Parmigiano and, by the way, the greens and sausage are really so flavorful you can cut back on the Parmigiano a bit.

Serve in heated bowls.

Trust me:  the radish greens add a real depth to this.
