A few weeks ago, I thawed a gigantic chicken breast. And I had thawed a few rashers of bacon for another use. Then I dug under the snow and harvested some arugula. And I still had a bit of my beautiful homemade ricotta...
Hmmmmm... What to do what to do...
I cut the Frankenstein breast in half... Put half away... Cut the other half in half and pounded the living daylights out of the two pieces.
I made a stuffing of 3 cooked and crumbled bacon rashers, 1/3 C ricotta, and about 1/3 C chopped sautéed arugula (sautéed a bit of garlic with the greens) and some salt and pepper. I rolled this up in the pounded chicken breasts, floured, egged, and breadcrumbed them... sautéed them in EVOO and a bit of bacon fat (yes, I got them a little too dark)... plated them with brown rice and sauced them with some chicken and sage velouté I'd made a few days prior.

Delicious! But I'll keep working on improvements to the stuffing.
