Hot 'n' Spicy Peanut Noodles with Broccoli

I had half a can of full-fat coconut milk.

I also had some cilantro that needed to be used, and a head of cabbage that I'd sliced into for the St. Patrick's Day colcannon...

Garlic, sriracha, limes, soy, angel hair pasta, some natural crunchy peanut butter, and gorgeous broccoli crowns that were on sale at Stew Leonard's...

Hot and spicy peanut noodles with broccoli... why not?!?

A few weeks ago, on a day during The Winter from Hell, it was almost 70° though a few days later we were looking at another snowstorm... and the temps were plunging fast. Time for spicy comfort food on steroids!!!

In the processor, I buzzed 8 garlic cloves, 1/2 cup peanut butter, that 1/2 can of coconut milk I told you about, the zest of 1 lime, along with soy and sriracha to taste.  I steamed some broccoli florets, and a bit of shredded cabbage.

I cooked the pasta until almost done. Then I flash stir-fried the vegetables, added the noodles, and then the sauce.

Topped with sliced scallions and cilantro leaves, this dish will be just as good hot as cold... But be prepared to hold on to the top of your head as it tries to explode!!!
