Hot Peanut Noodles with Chicken

A few days ago, I cooked too much pasta. I needed to do something with it.

I had been thinking about some kind of Asian noodle dish, but I realized I had some scallions and some chicken in the fridge that also needed to be used. So my mind started to move away from cold "fake" sesame noodles (the kind I often make with peanut butter, soy sauce, and sriracha)... to a hot version that included diced chicken, scallions, and garlic.

I sliced a bunch of scallions... white and green parts... and sautéed them until soft.  Then I added 6 minced garlic cloves and sautéed for another 2 minutes. I moved the scallion mix to a bowl, and used the same sauté pan to cook a chicken breast (cut into small dice) until it was barely pink, and added it to the scallion mix.

In a large bowl, I combined 2 heaping T crunchy, unsalted peanut butter, 1T soy sauce, a good shot of sriracha, and about 1/2 cup water.

I covered the bowl, and nuked it for one minute, stirred the mixture, added the cold cooked pasta (about 3/4 of a pound) and nuked it, covered, for about 2 minutes... stopping occasionally to stir it. When the pasta had warmed and re-softened, I added the chicken-scallion mix, nuked again for less than a minute...

Added a big handful of chopped cilantro... tasted for seasoning (it needed a bit more soy), and had my own version of a very happy meal!
