In continuing my Greek-inspired summer...
I had some pizza dough from the other night... A mess of arugula that I'd cooked down... Red peppers I'd roasted (another big Fairway sale)... Extraordinary green olives I'd been given by a chef friend... My new find: Cheap-But-Tasty-Feta from Trader Vic's... Fresh dill... and some wonderful fresh mozzarella from Arthur Avenue...
What the hell? Why not a Greek pizza?!?!?

ANYWAY, I chopped up the cooked arugula, squeezed as much liquid out as I could, mixed the greens with some roughly chopped dill, diced olives, red pepper flakes, smoked salt, and minced scallions, and spread that on the prepared crust. In a silly design moment, I fanned out long strips of roasted red pepper in a pinwheel! (Yes, fine, mock me... I do things like that sometimes!)

I topped it all with a fairly judicious amount of feta, and scattered cubed mozzarella on top of that...
Then... Into the oven....

I'd say Voilà!, but I think Opa! may be more accurate or appropriate. This was one fine, surprising pizza... One that will now enter the rotation! (See... even I can do the occasional sports metaphor!!!)
