Joseph H. McCann's Raw Fried Potatoes

 

A few days ago, my remarkable Father would have turned 100.

This, of course, got me thinking about the many gifts he gave me.  And one of those gifts was or perhaps were these amazing potatoes he used to make on special occasions.  It's taken me years to approximate his method, because central to it were two things I don't have in my kitchen:  Crisco and an electric frying pan!

After much trial and many errors...

This is a close approximation.  I think he'd approve.

Slice the desired number of Idaho potatoes, peeled, into  thin rounds...  Not chip thin, but about 1/8th of an inch thick.

Soak for about 30 minutes in cold water.  Then, in a large, non-stick frying pan, heat a bit of EVOO, add the potatoes (and don't crowd the pan... you may need to do it in batches)...  Flip until coated...  Then cover.  Cook until they start to soften.  Salt and pepper very generously...

Then cook uncovered... Maybe raise the heat a bit, flipping frequently, until soft and golden.  Check for salt and pepper.  Don't worry if there are a few "burned" spots..."

That's an integral part of them!!!

No, he didn't use EVOO.  No, he didn't flip them in a non-stick skillet.  But these taste great!  And remind me of those nights when we were all thrilled that he was going to make his famous raw fried potatoes!
