I know...
Even saying it's a mouthful!
AND... I have to warn you: this may not be a very helpful recipe per se, but these burgers were so good I had to post.
The problem is, you'd have to have portions of a whole bunch of meals remaining in the fridge or freezer to make these exactly this way. But I guess what I want to get across is that being creative with what's in the fridge is really, really important... and really pretty easy with just a little thought.
I took about 1/2 C of cooked black-eyed peas, 1/2 C cooked lentils, a sweet potato rosti that tasted great but wasn't too successful texture-wise, a few homemade croutons that were getting stale, a handful of lima beans from an Indian experiment the other night, a bit of cooked brown rice, and some chopped scallions and tops... and pulsed them in the food processor.
Then I added a few broken saltine crackers (the sleeve had more than its share of broken ones!), some Worcestershire, some sriracha, an egg, salt and a ton of pepper. I didn't process this to mush, but left some small chunks. I formed it into patties, coated 4 of them in breadcrumbs and sautéed 'em in EVOO, and served them on a bed of arugula with a dressing of mayo, ketchup and fresh horseradish that I'd made for a dinner the week before.
Did this taste like beef? Not at all.
Did this taste delicious? Absolutely! This was Veggie Burger Heaven! And all because I was willing to give some thought to those containers in the fridge.

I know the contents of the fridge often seem daunting... but the more you play with your food, the more likely it is that burgers like this, and other flavorful combinations, become second nature.
And PS, this tasted like itself! Not like an old meal reheated!!!
And PPS, I have 6 more delicious, nutritious burgers in the freezer!
