Lime Ice Cream!

 

Invited to a gathering...

Asked to bring a "healthy dessert..."

Panic ensued.

Generally, I'm of the vaguely French school:  I'd rather end a meal with cheese.  But when I'm in the mood for dessert, I go WAAAAY over the top!  So "healthy dessert" struck a bit of an oxymoronic note...  But I do love a challenge.

Then the solution hit me like the proverbial ton of bricks:  my riff on the legendary Barbara Tropp's light lime ice cream!  I hadn't made it in years, but boy, did it fit the bill!  No yolks, no heavy cream, but OMG... It's as refreshing as a sorbet, but has a creamy mouth feel that belies its origins.

Process 2 C sugar with the grated zest of 6 well-scrubbed and rinsed limes until the mix starts to liquefy.  Then add 1 cup lime juice (you may need an extra lime or two) and process a bit more.

In a large bowl, add 4 cups half-and-half and a pinch of salt. Stir and then let it sit for about half an hour...  Don't panic...  It will look a bit like greenish cottage cheese!

Strain the mix through the finest mesh you have and freeze it in whatever ice cream maker you have.

You will not believe it!  And, like Ms. Tropp, you'll have trouble with full-fat ice creams after your first taste of this light limey treat!
