More About Fava Beans

So... fava beans... one of the great reasons to survive the winter and emerge into spring.

Huge pods... you open them up and remove four to six beans from each strange, furry pod...

Then blanch the beans for about a minute in boiling salted water. Drain them, and plunge them into cold water... Then... and yes, this is tedious... but worth it... pinch open each bean to remove the BRIGHT green inner bean.

You can eat them at this point, or briefly sauté the beans in butter or EVOO...

And simply season with S&P... or dust with Parmesan... or if you want to attain Nirvana, add some chopped prosciutto... Heaven!!!
