A non-meat-eating friend was sent a beautiful - and I do mean beautiful - frozen New York Strip steak. Knowing she wouldn't eat it... and that I would... she gave it to us. It was still frozen solid, so it went directly into the chest freezer, there to await a festive occasion... Well, the return from catering in L.A. over Christmas provided just such an occasion.

I thawed it very gently over two days in the fridge, dried it carefully, massaged in some EVOO, a good amount (more than you'd think) of Kosher salt and very coarsely ground pepper, and tossed it in a screaming hot cast iron pan...

I Left It Alone for just under two minutes, flipped it, waited another two minutes, and then put the pan into a 350° oven...
I pulled it out about five minutes later.
Let it rest.
Plated it with some sautéed potatoes and shredded Brussels sprouts.
And proceeded to completely forget the long hours on The Other Coast cooking for other people!

Just FYI... This was still pretty... how shall I say... Rare... OK, blue... in the center. But that's how we like it. If you want to ruin yours... oops... I mean, have it more well done... Add more time in the oven... not on the stove.
