The Friday Fridge Clear-out in the test kitchen netted me: orange peppers, watercress, onion, radishes, rosemary, grape tomatoes...
I had a wacky idea.
So I sliced the radishes into matchsticks, minced some garlic, diced the peppers, thin-sliced the onion, pulled off the largest watercress stems, rough-chopped the greens and small stems, halved the tomatoes, diced and sautéed some stale baguette to make croutons... and I was ready.

I sautéed the onions in EVOO for a few minutes, then added the rosemary, peppers and garlic. After a few more minutes, I added the radishes and tomatoes and the watercress. I let this sauté for a minute or two, and added some almost-cooked rotini...
Finished the cooking. Turned off the heat and added Parmigiano and a dash of cream. Served it in heated bowls... and sprinkled those crunchy croutons over the top...

This was a winter version of primavera that was equal to any actual primavera I've ever made. And cooked radishes? Two thumbs... Way Up!!!
