Pizza with Ground Beef

After Nick's dinner, I had some pizza dough demanding to be used... but no sausage or pepperoni in the house... and we'd just had a number of meals utilizing the profusion of fresh herbs in the yard...

So, clearly, Something Meaty was called for.

Then I remembered a small bit of ground beef in the freezer.  So I sautéed about 8 cloves of minced garlic in a little EVOO, added what was probably 1/4 pound of beef, and sautéed it until the pink was almost gone...

Then I smooshed (the technical term) 4 Roma tomatoes from the can (pick your favorite), added a handful of chopped fresh oregano, and turned off the heat.

Once it was cool, and the oven and stone were preheated, I slathered the dough with the meat sauce, sprinkled on some red and black pepper and, of course, a bit of smoked salt...  Topped it all with a judicious amount of mozzarella and Parmesan... and baked.

Then we sat down with a glass of cheap red... and had a fine old time.

When you don't have what you think you want:  improvise.

You'll discover that you know what you're doing!!!
