Potato-Mushroom Curry with Brown Rice, Sour Cream and Lime Zest ('Shroomapalooza #5)

I had peeled potatoes...  I had cleaned mushrooms.

India was calling.

So I looked online just to see if what I had in mind was something that had occurred to anyone else.... Turns out it was!  But I wanted to free-style this, so I didn’t look at recipes.

I brown-fried a chopped onion...

...then added about a tablespoon each of minced garlic and ginger and sautéed for about a minute. Next I added my homemade curry powder and some ground cumin, coriander, cardamom, turmeric, a splash of sriracha, and some salt. After another minute, I added some chicken stock. I let this cook on low for a few minutes, and then turned off the heat.

I sautéed some cubed potatoes...

...and at the last moment added some more curry powder. Then I sautéed quartered mushroom caps. I combined all of the vegs with the sauce, tasted for salt, and added black pepper.

I served this over brown rice topped with a bit of sour cream mixed with a chopped avocado, then I topped the whole thing with lime zest.

I can’t tell you which southeast Asian country would claim this... but I’ll claim it!  This is great!
