Sage & Prosciutto Pizza with Heirloom Tomatoes

I knew there had to be at least one pizza during the brief hiatus betwixt Boise and Cleveland...

But which one?

The yard was filled with beautiful sage (my favorite food), so a sage and prosciutto pizza seemed the way to go. I sautéed 6-8 minced garlic cloves in EVOO until they began to soften, then added a heaping tablespoon full of chopped sage...

I said it was my favorite food, didn't I?

I let that cool and then spread it on a rolled-out crust.  I topped it with more chopped sage... uncooked... draped see-through slices of prosciutto over the garlic and sage, covered the whole pie with mozzarella and Parmesan (not too much cheese, please!), and baked it.

No added salt... no red pepper flakes... just the glorious taste of garlic, sage, and EVOO.  Along with a simple salad of Black Brandywines from the garden...

Simple, perfect, and one of the great side effects of a lot of garlic...

I slept like a dead man that night!
