Salmon Rillettes

Old-fashioned word.  Old-fashioned food.  REALLY good!

I had a package of wild-caught, frozen salmon filets from Trader Vic's... and I didn't want to hassle with trying to thaw enough for us while keeping the other portion frozen... so I thawed it all... and cooked it all, assuming I'd make a salad or some such from the remaining piece.

And then, I had another one of my V8 commercial moments... RILLETTES!!!

So I did a little research on "potted" things, and decided it was perfect.  This is certainly one of those recipes where you can add or subtract most anything, according to taste.

I flaked one of the cooked filets into a bowl, added some mayo, some capers, a bit of salt and pepper, some VERY finely minced shallots, a tiny bit of Dijon mustard, some minced parsley, and then I mixed like crazy.

Against my own wishes, I refrigerated it, and covered it in plastic wrap for a few hours.

Then, out came the crackers, some good wine... and it was flavorful enough to be dinner on its own.

Try this sometime!  Change the whole list of ingredients if you want, but try it.
