Sautéed Ham with Sautéed Potatoes, Sour Cream, Smoked Salt and Paprika (Hamapalooza #3)

(No, Dear Readers... This is NOT hash!!!)

I cubed about 4 potatoes, seasoned with salt and red pepper, and sautéed them in EVOO until very crisp and brown. I then tossed them with about 2t smoked paprika and set them aside...

Then I cut 1/2 a medium onion into chunks and sautéed them.  I added them to the potatoes, and then sautéed 1 C chopped ham until it began to get crisp and brown.  To finish, I added the ham to the potato-onion mixture, seasoned it with a little smoked salt and a bit more smoked paprika.

When everything was hot, I tossed in some chopped parsley, dished it all into heated bowls, topped it with some sour cream and a sprinkling of regular paprika...

And a lovely, simple, wildly flavorful dinner was served on what, one hopes, is one of the two final cold cold evenings until next October!!!
