I made WAAAAAY too many sesame noodles... and, as they are cold, they're just fine for the next few days. But sometimes I just need to play with my food, so... I took about a cup of the noodles (not the ones I'd added vegetables to in my previous post)... and added an egg and a white I had sitting in the fridge, plus a minced scallion and some diced red pepper. In my small non-stick skillet, I heated some oil, added the noodle mix, and cooked it all on medium high until the bottom was set. Then I turned it out onto a plate because I'm a flipping coward... (Get it? Flipping coward??? Never mind...) ... and slid it back into the pan to brown the other side.

I served it with arugula and a little tiny burger, all dressed with a combo of dressings I had in the fridge: Thai mayo and smoked paprika mayo with a dash of sriracha! This was one of those laugh-out-loud-it-was-such-fun kinds of dinners...
