Sorry... Sometimes I can't resist puns. It's genetic.
It was absolutely freezing in Yonkers a few weeks ago, and Charlie wanted something in the "meat" world. So after a bit of back and forth, we decided on Thai... something.
So... I sautéed a chopped onion until it was starting to brown... then added some ground beef... cooked that until the pink was gone... to that I added 3T of wonderful Thai Green Curry Paste and a half-cup of coconut milk and a bit of stock.

I flavored this mix with some soy sauce and fish sauce and a bit of my habañero hot sauce. I let this simmer for about 20 minutes on low while I started to cook some brown rice. Just before serving, I added some chopped cashews, roasted peppers, and a shot of lemon juice.
WOW.

We were both happy with the journey to Thailand and the comfort therein...
