OK... Big Gigantic Alert! I made up a dish tonight... AND IT WAS AMAZING!!!
Right. No modesty here at all...
I wanted a salad because it's hot and humid. But sometimes a salad just doesn't do it for me.
So... I minced 3 stalks of celery and 6 scallions. I added 1 large bag o' tuna. I mixed 1/3C mayo with a heaping T of great Thai green curry paste, and added that to the tuna mix.
Just before serving, I minced a handful of Thai basil from the garden and added it to the mix. Then I micro-planed the zest of 1/2 lime. I plated this miraculous mixture atop a bed of undressed arugula and then, for the Thai version of a pièce de résistance... I dissolved 2T crunchy peanut butter in 1T fish sauce and 1T lime juice, and spooned this spectacular peanut sauce atop the tuna...
O.M.G.
As we ate, we savored a bit more or less of the peanut sauce in each bite...

Truly, this is so easy! So cheap! So ridiculously good!
And if you don't have Thai basil growing in your garden (though why you don't is a total mystery to me), substitute some Genovese basil....
Really... Try this! It is so good! Unlike anything you usually make...
No, really... TRY IT! OK, I confess I'm a little giddy. Great Asian-inspired food does that to me. Every time.
