So... Heat Wave #4 finally broke... in a big way. We went from temps of over 100o to a cool, grey, rainy Irish kind of day... and it never got out of the 60s! Of course that made me want to pretend it was midwinter... and I wanted comfort food. So we lit a fire and I made meatloaf, mashed potatoes, and peas. Heaven!

As for the meatloaf... into 1½ pounds of ground beef, I mixed 1 large egg, about ¾ C of fresh bread crumbs, salt, pepper, some smoked paprika, 1 t of my habañero hot sauce, and ¼ C grated onion. This mixture is placed in a loaf pan, and cooked in a 350o oven for about 45-50 minutes. But the secret is... 3 or 4 times in the last 20 minutes of cooking, carefully remove the pan from the oven and tip it so you drain away a lot of the fat that would otherwise make the meatloaf float!
This meal is always fun...but especially in front of a fire in late July!
