It's one of those nights when, regardless of how much I love to cook, I stare blankly into the cavernous maw of the fridge or pantry at a total loss. I have no idea what to make, or even what I want to eat. But there's always one very easy solution:
Cakes... Patties... Burgers... and I don't mean hamburgers.
Take some leftover fish or chicken or ham or turkey or even a can of tuna... add some chopped scallions, bread crumbs, eggs, herbs...
Form this mess into a burger, coat in more bread crumbs (or don't) and sauté in a little olive oil.
Resist the temptation to move the burgers around a lot! Let the first side crisp up before you start moving and flipping. The egg won't take long to cook, and the meat (or fish or chicken or ham or turkey, etc.) is already cooked... So all you're doing is browning. Serve on some undressed greens with some ketchup, or mayo, or mayo that's flavored (soy sauce, lime juice, Sriracha, etc).
Problem solved!

PS. I served these tuna cakes with some Forbidden Rice... tastes great and looks amazing!
