Tuna Panini

 

It's been hot...  OK, not August-in-NYC hot, but hot...

I didn't want a salad.  I didn't want a hot meal.  Then I had a brainstorm...

A sort of vaguely muffuletta-like panino!  (For the uninitiated, muffuletta is a delicious, over-stuffed, olive-heavy New Orleans sandwich.)

So I made a simple tuna salad:  bag o' tuna, two minced scallions, 1 minced stalk of celery, 6 minced kalamata olives, a touch of salt pepper and red pepper flakes, a squeeze of lemon juice, and 2 T mayo.  I hollowed out 2 lengths of split baguette, layered on a bit of mozzarella and some leaves of purple basil, spooned on the tuna, and then I pressed this on a hot grill pan with a heavy weight (my cheapo version of a panini press)!

Really good, really tasty, really fun... and not too much for a hot night.
