You Can NEVER Be Too Rich... (Homemade Pasta with Chicken Alfredo Sauce)

 

I roasted another chicken...  Yes, I'm on a roast chicken roll, so to speak...

I know!  I'll spare you another picture of a roast chicken, but if you want to look it up and read the recipe, see my post on November 6, 2012...

After the first wonderful night... roast chicken, mashed potatoes, peas, gravy... I had a lot of chicken left... ready for an Encore... So tonight I decided that as we're in December, the month when excess is never enough, it might be a fun night for fresh pasta with a rich chicken Alfredo sauce.

 So... I poached a lot of minced garlic in EVOO, and added a bit of chicken gravy from the night before, along with a good splash of the stock I made from the carcass and then another good splash, this time of heavy cream!

This simmered for a bit to thicken, then I added lots of black pepper.  While boiling the pasta, I shredded some dark and white meat, and added it to the sauce just long enough to warm it.  I drained this homemade fettucine when it wasn't quite done... saving some pasta water... and added the sauce to the pasta to finish cooking.

If it starts to look too thick, add a splash of the pasta water.  Then take it off the heat and toss in a big handful of grated Parmesan, sprinkle with chopped parsley (if you want to) and serve with a big full-bodied white wine.

WOO HOO!!!!!!
